2 day Culinary/Hospitality Specialty Coffee Course ($500.00)
Coffee quality is a very important component of any foodservice operation. While great coffee and espresso are easy to prepare and present for the optimum customer experience, too often just the opposite is true. Visit most any restaurant and you’ll find, for the most part, sub-standard, overpriced and bad tasting coffee. Restaurant and other foodservice patrons are becoming more sophisticated in how they expect coffee and espresso to taste. They are buying their own beans, attending classes and educating their palates more so than ever before. The U.S. coffee market has grown by 10 billion dollars annually in the last five years with the dominating sector being specialty coffee in retail shops. It stands to reason that the people that are buying those cups expect the same or better quality coffee when they dine out. The course of instruction outlined in this program is designed to address a very present need for an elaborate and intensive education in specialty coffee for both culinary students and professionals. By following a progression from basic to advanced instruction, the students will gain a complete knowledge of specialty coffee, not commercial coffee, and how to apply it effectively in a culinary setting.
Corporate Specialty Coffee Training ($TBD)
Larger corporations present a unique challenge when coffee quality becomes an issue. The ECBCS has the capacity to instruct corporate entities in quality management, proper sourcing, training documents and courses, store-level marketing and up-selling, best equipment selection and water quality. The school also continues to assist in corporate team building and special events.
Restaurant Staff Training ($100.00)
Restaurant staffs are usually some of the most poorly trained individuals that directly suggest, handle and present coffee to the customer. The experience, as we all know, could be great but usually is not. This 6-hour course is pointedly designed to eliminate bad habits and instill proper procedures and training for great coffee. Both brewed coffee and espresso are cover in this fast-paced but highly beneficial session.
Consumer Classes ($100.00)
Consumers are invited to attend a variety of classes that are fun, informative and interactive. Home Coffee Brewing, Home Espresso, Home Coffee Roasting are but a few of the courses available to the consumers in the region. Comparative cupping sessions held in the SCAA certified cupping lab take the consumer out of their world and into ours. By instructing them in the proper method of tasting coffee and allowing a small glimpse into the coffee industry more and more interest is gained and demand for better coffee is continued. The consumer market also will be able to buy great coffee beverages when the school is open to the public from 6:00 a.m. until 10:00 a.m. and 7:00 a.m. until 7:00p.m. on weekends.
