Coffee is the seed of a fruit known as a cherry. When it is a ripe reddish-purple color, the cherry is harvested and the seeds, which become coffee, are removed from the surrounding cherry. Our farmer-partners then sun-dry the fruits on raised drying tables until dehydrated. The result is a pleasantly sweet, slightly savory taste that never gets bitter. Also, Cascara Seca has the highest naturally occurring volume of antioxidants.
